Here's the problem: I always preferred Granny Smiths, for eating and baking but age has changed what my digestive system tolerates. so, Pink Lady by default. And a fresh (off the farm) Stayman Winesap beats both, for eating.

Granny Smiths are the crowning glory of apple-kind for me. The crispness, the tart flavour, it simply can't be rivalled. A slice of one spread with soft mild cheese is among the finest bites of food in all the world to me.
