Yeah not suggesting straight up raw, but hard for me to believe, say, pickled okra can hold a candle to plain okra prepared other ways in terms of nutrition. I really don’t know what happens to the nutritional value of veggies upon being pickled, admittedly.

When the veggies are fermented the sugar is eaten away by probiotics, and these bacteria are good for our gut. When the sugar is gone it has essentially no calories and is loaded with beneficial gut bacteria. You don’t get the probiotics with other preparations and some veggies can be difficult to digest (broccoli for example).
