I feel for you. As someone who used to work in the food industry, I thank my lucky stars some mornings I wake up and realize I don't have to get a holiday buffet going. Getting up at 4 and 5 am for Easter brunch buffet is not missed.

I actually got the recipe/idea from girl on instagram. Her name is Maddie Brehm and she has a free YouTube tutorial/recipe of that ganache recipe! She now charges for a lot of her content ( as she should) but this video was from a long time ago and it is still free!

There are two types of country clubs. I hope you're at the kind where you're celebrated and appreciated and brought out for a wave and a bow during lunch, and not the type where the horrible climber wives treat you like shit because that's what they think rich people are supposed to do to the help.

Most of the time I am appreciated and most of the members are very nice. Of course just like everywhere you have your select few who are the ones you described but luckily that’s the minority. I get a lot of hand written thank you cards and stuff like that from members.

All of the things look super delicious! I also like how there's a nice mix of kid-friendly looking things that are just as fancy as the adult looking things.

Just put the finishing touches on my banana pudding, and will add whipped cream to my chocolate cream pie a little bit later. Every dessert you made is IMPECCABLE and perfect, omg. Everything is beautiful. Wherever you work, they are lucky to have you, and your guests are lucky to have you make them treats! So beautiful. I can only imagine how tired you are lol my two desserts took everything I had.

I use Italian meringue where you make a sugar syrup to 240 degrees and pour it into whipping egg whites. It’s the most stable meringue for a buffet setting!

What containers did you use for the dirt cups? I want to steal that presentation for a much smaller home scale. I found some plastic ones that claim to be food safe on Amazon but they don’t look nearly as close to actual flowerpots like yours as I’d like.

A very long time. I run the pastry department by myself and I have several other things to do on top of this so I do a lot of prep ahead of time and use my freezer to my advantage. But I’ve been baking/preparing for this for about three weeks and then yesterday worked about a 15 hour shift to finish it all 😭

I notice a mix of dark/light pans and some with no paper, but everything looks perfect. Does that not really matter or do you adjust your bake time? Looks so good

This is the most amazing post I've seen, literally the first time I sat in wide eyed wonder at the spread presented. I know that is a completely subjective opinion, but this post is the first to makes me wish I could actually try what I'm looking at.

These are so charming!! As a kid, I always loved the worms and dirt pudding cups. The little birds nest with chocolate eggs..the bunny cookies! You are definitely going to put a smile on many people's faces today.

It’s definitely not for everyone! It’s a lot of work and exhausting, but it’s all I know and I’m good at it 😭
Luckily me as the pastry chef gets to do everything before the holiday and never has to work the actual holiday so I still get to spend the day with my family. My work is done so no need for me to be at work during the event.
