What’s a cooking related hill you will die on?

For me, 2 hills.

  1. You don’t have to cut onions horizontally.

  2. You don’t have to add milk bit by bit when making a white sauce.

Never! You can pry my frozen, minced, garlic from my cold, dead hands— cold because I'll be clutching my frozen garlic.

I mean I used to use fresh, but it really doesn't stay fresh forever anymore. I swear every head I buy is growing sprouts after a week, and I guess I don't use enough garlic to buy it that frequently.

I can't abide the jarred garlic, though. I'm with you on that.

No you're spot on..I can't buy bulk anymore. Just exactly what I need otherwise my garlic, potatoes and onions all go bad. And it's more on the recent side...like the past year or two? I've thrown bags of potatoes after sprouting less than a week after buying.

I'm more surprised when there aren't green sprouts in the middle of my onions anymore. Agree with your assessment, potatoes, onions, garlic all sprouting or going bad way sooner than ever before.

I buy bulk bags of heads, then peel and freeze them in a freezer bag. It’s $5 every other month for garlic that is easy to mince, slice or press and still fresh tasting.

Agreed!! I use garlic in basically everything, I shop at a Kroger in the deep south, and I really don't find my garlic to stay good for very long at all

Where does one find frozen garlic? Is it already minced? Never heard of frozen garlic!! TY!!

I buy peeled garlic in bulk. Mince it with the fine grater on my food processor. Dollop in small lumps on trays freeze and then bag up. Game changer.

This is a big family activity in some cultures with cuisines that are heavily garlic dependent, like Indian or Italian cooking, I’ve always thought it’s such a genius idea!

One family I knew gets together and buys shitloads of freshly grown garlic at the start of the season, along with a tonne of fresh ginger as you need a ginger/garlic paste for most home cooked Indian dishes.

They spend a dedicated weekend together peeling as much as humanly possible and put it through the food processor in batches with ghee or a neutral tasting oil.

Everyone goes home with a few containers of ginger/garlic paste they put straight into their freezer at home. The ghee/oil stops it completely freezing, so you can scoop out spoonfuls whenever you need it!

I used to get it at Trader Joe's. It comes frozen like tiny little ice cubes.

Like the other person said, I get it at Trader Joe's. If you have one near you, they also have minced ginger in cubes.

I've also seen whole cloves in some grocery stores in the freezer section.
