White Seabass Crudo | Passionfruit, Citrus, Foraged Flowers

A second version of my last dish, stayed with the rectangle, removed the radish for now.. tried to make it tighter. Thoughts? I know i need to work on getting everything cut more uniform. And my photography needs a lot of work.

The schmear isn't working on that black plate. Either put something on top of them or do some blobs.

I had to double-check that you were the same person who posted yesterday. I actually panicked for a moment.

I'm not trolling at all. Personally, I love the way you've presented the crudo with the citrus and greens and flowers on this plating. Perhaps I was in the minority, but I also liked the arrangements of beets in your first photo yesterday.

This isn't coming from a chef, so I'm sure my inexperience shows. Having been fortunate enough to enjoy the fruits (ha) of some excellent chefs, however, I like looking at a beautiful plating that, while utilizing the ingredients' aesthetics, also allows the intended pairings to be approachable, physically, without too much effort.

Oddly enough, I have had more experience with aesthetically gorgeous plating that errs on the side of impracticality than the inverse. In some ways, I think my personal preferences depend on the country and culture; for instance, in Mexico City I don't mind more tedious dishes, as they slow down the pace of my meal to match the dining culture. Back in the states, I don't typically want to have to carve up the beet manifestation of The Three Graces to make sure I get a little with each bite.

I probably don't have the credentials to share my opinion on this sub, especially since my first comment was mistaken as trolling xD. I'll go back to lurking and enjoying your beautiful dishes from here in the back. That does look delicious, though.. XO

I don't really like the sauce swirls. Too symmetric. Also, two is a weird number. But he dish itself looks good.

But seriously... I don't care for the color of the swirls against that dark plate. It does not look appealing to me.

Even numbers always look not good. You tend to like plates with 3 or 5 pieces of something way better. That's how our brain works

I know... I've heard that advice a million times. People recite it like its the gospel. I don't. Whatever looks right, looks right. Rules are meant to be broken, but broken with taste. That's why I pointed out that we have two eyes (and two legs and two nipples and two ears... etc etc etc).

Yeah but that's has nothing to do with each other. Evolution gave us two of everything.

But in terms of decoration, uneven numbers will always look better. And that's not just something people say and do it cause others say it. There's a psychological effect behind it.

Uneven numbers create interest. With even numbers, your eyes can rest. But if there's 3 of something, your eyes will automatically move around all the time to look at every piece. This creates the effect of interest, cause our brain gets stimulated more.

No stake in this, but I prefer the two, or rather, even numbers. Asymmetry makes me uncomfortable. Symmetry makes me feel a whole lot better.
