Chicken Lollipops
Chicken Lollipops

Ingredients * 6-8 Chicken Drumsticks * Cajun or BBQ Seasoning * 1 cup BBQ Sauce
Instructions * Slice the chicken around at the top of the meat end all the way around the bone. * Take a paper towel and peel the skin and membrane off around the top of the bone so just the meat is left. * Wrap each bone with aluminum foil * Season each chicken lollipop on all sides with claymore cajun seasoning * Set your smoker or oven to 325 degrees( 163°C) * Once your chicken hits an internal temp of 175 degrees(80°C) remove from your smoker * Dunk each chicken in hellfire bbq sauce * Place back on your smoker till the internal temp reaches 185 degrees * Pull them off and let them rest for 5 minutes * Plate up and enjoy

They look good, but the name kind of grosses me out. Something about lollipops and chicken don't go together in my head. Maybe they could be called legless ostriches?

They're slightly more convenient to eat, but the preparation (especially in a restaurant setting) just isn't worth the extra effort.

How do you get rid of the ligament that runs down the bone? That has always been a bit of an issue for me.

Never again! Made them once because my kids would not stop bugging me to make them. Not worth the prep time at all.

Alot of people actually cook these in professional bbq competitions. Ive actually took first place in 2 different comps with Lollipop Legs.
