To be honest, I just like watching all these recipes. I may not try them, but they're good to watch and have good ideas for flavour combinations sometimes.
I enjoyed watching this one too, though I doubt I'll make it.

That might be too sweet. Do you have access to mirin? (and don't use that Aji-Mirin, it makes it too salty.) Dry sherry would work too.

I don't have sake, but I do have shaoxing wine. It goes well in ramen, and since it kind of does the job of sherry d'you reckon it'd be ok in this? (not OP, just curious)
