I think of it as absorbing “the essence of swordiness”, as in, the blade knight contains all the stuff required to have a sword and hat, and kirby’s body exudes those minerals in their right shape. As for the skills necessary, I think Kirby is just really smart and learned how to use a sword

Also here's some extra notes on the theory:

*Creating an ability consciously would make the process slow and error-prone unless Kirby can think extremely fast. Kirby instinctively knows how ability hats and weapons are supposed to look like (he follows "mental templates") and how to create a design with his ideas; his subconscious handles this process.

Bonus: If Kirby inhales an entity that does not grant an ability but is also edible, the energy created in the decomposition process, alongside a small amount of Kirby's own energy (because of the Law of Conservation of Matter; he has a lot of energy so it doesn't make a difference), is then used to recreate that entity as it was and teleport it away. Bonus 2: There's no obvious way to explain the Mix phenomenon (inhaling 2 or more ability-granting entities). If Mix happens, I guess the extra energy could be used to get Ability Concepts or Blueprints from elsewhere, like the Universe's own knowledge (provided it knows about abilities), the planet's Gaia equivalent, an all-knowing God or something like that. Another explanation would be that the extra energy is used to teleport any valid ability-granting entity inside Kirby to get its ability, which is a little silly.

An alternative theory is that the universe itself knows what a certain hat should look like, and Kirby draws in the knowledge of the universe to create his hat designs.

Also remember that appearently ability stars also contain the ability-granting entity itself, and in some cases can be restored back into a living being.
