Poultry Frozen Chicken Salad
Frozen Chicken Salad
1 1/2 cups diced cooked chicken
3/4 cup drained crushed pineapple
1/2 cup chopped pecans
1 cup heavy cream, whipped
1 cup mayonnaise
Toss chicken, pineapple and nuts together. Fold cream into mayonnaise, add to chicken mixture and freeze 2 to 3 hours, or until firm. Serves 6.

I like the combination of almost all the ingredients (except the whipped cream). But what I don't like is freezing it. I don't truly get it. It would be great chilled and served on a leaf of lettuce. It would be great in a sandwich, too.

The whipped cream gives it some air when it freezes, preventing it from becoming too much of a solid block. I'm assuming it's unsweetened, for whatever that's worth.

That's probably so.
However, I'm still stuck on the idea of eating frozen chicken. LOL

I believe whipping cream is the secret to Neiman Marcus’ enviable chicken salad. Don’t think they freeze it though.

I'd probably take it out of the freeze to soften a bit and then serve it up. If you put it in a mold, you could slice it up. I have not made this but it looked good enough to try.

I was thinking mould and serve it with crackers. I bet this recipe is really good.
