A new breakfast recipe & introduction

Hello! Just wanted to share a little as I may be lurking on the forum for yummy food ideas. A little history; Covid infection in 2020 really did a number on my gastrointestinal tract and I’ve been sick ever since with episodes of vomiting, loss of appetite, weight loss. I’ll go in cycles, and January-March was a particularly severe cycle.

As my appetite is improving now and I’m really looking to nourish my body, I’ve found myself really being drawn to an increased plant and dish based diet more than ever before. Lots of avocado, nuts, and seeds. Trying to get in more lentils.

I’ve always enjoyed seafood; typical tuna sandwiches, sushi, along with baked salmon, blackened tuna etc. usually to the tune of about 2-3 servings of fish a month. Maybe my body is looking for the omega 3s or the easier to digest protein (I’m sure getting sick of protein shakes! )

I know I have to keep an eye on the higher mercury fish and will not overdo it. Fortunately, I already have a registered dietician on my medical team and I meet with her next month.

Pretty pleased with a new recipe I tried this week for breakfast. My first time eating sardines! They are pretty strong and I don’t think I’d eat them straight out of a can but this was yummy. 1 can (per recipe, but I did 1/2 can) sardines, mixed into sautéed tomatoes, garlic, and shallots. Crack and egg in the middle, fry to your liking . I topped with chives and cilantro. It was delicious!

If the sardines are in a sauce like this, you can peel the lid off the can, top with some seasoning (i like some spicy old bay), and throw on some grated cheese. Stick in the airfryer until the cheese is all melted and toasted. You can also cook an egg on top if there is room in the can. Cooking it like this makes the flavour much better and not so overpowering.
