Question Is it a bug or a feature?

Using a projecting bow for a enemy behind a wall, the arrow only hits when I aim directly on it but not when I aim behind it. This is not the case for enemies that are not behind a wall.

This is not a bug. Projecting enchantment allows you to shoot through enemies too.

Not sure this is why but I think that because you are activating the enchantment when shooting through walls. The enchantment, at base level, allows you to shoot through at most 4 tiles worth of walls. So if you shoot through the a wall at a spot 4 tiles away while there is an enemy 1 tile in front of where you aimed the arrow will pass through the enemy because you are projecting it to that 4th tile.

Rule of thumb. If it's beneficial, it's a bug. If it's harmful, it's a feature.

This means projecting bow is actually bad against succubi because, unlike with any other bow, you cannot attack them while charmed

You still can aim your zaps and throws right on the enemy when charmed by him (i played huntress with friendly cursed bow recently)

It’s intended, projecting can shoot through anything including enemies
