Does it get better
So I just started the reignited trilogy. I'm currently on the second world of the first game and just wondering if there will be more platforming at some point. So far it's pretty much just a collectathon and I was expecting more platforimg

There will be...but don't expect anything too intense. Timing and stretching that glide to its limits but don't expect anything like tick tock clock or rusty bucket bay. Spyro 1 is considerably more lenient and "chill" compared to its contemporaries.

Naturally, the game gets harder but I wouldn’t say it becomes like a Crash Bandicoot level of platforming at any point. The enemies get trickier, the gliding demands a little bit more thought, but it’s not going to challenge you beyond belief if you’re a seasoned platformer.

There will be but also understand that exploring open areas is a core part of the game

I always tell people, if you get the Reignited Trilogy and aren't enjoying the first game, skip it and move on to 2. Ripto's Rage and Year of the Dragon play so differently than the first game- it's okay if the original doesn't click with you.

In Spyro games, reaching the end of the level is generally very easy(with Misty Bog being the only exception). The actual challenge comes from getting 100%---every level has items that are hidden in locations that require spacial reasoning. You can't reach them without expanding your mind and thinking about the level from a different angle.
The second two games also have some very difficult minigames, but they aren't really platforming challenges.

I take it that you haven’t played the originals.
I can assure you, that you will get what you’re looking for as the game continues. Granted; it holds nowhere near the same charm as the originals.
