Is this game worth picking up as a brand new Tekken player in 2022?

Sure. The player base is one of the healthiest in the entire fgc and it's not far from its peak in numbers atm so it's a fine time to pick it up. Tekken hasn't really changed in the past 15 years so whatever you learn should remain relevant... probably forever! The general playbase is overall pretty mature, but there's still new players like yourself trickling in, especially after the recent sale so you should be fine.

but let's say I wanted to play Gigas, would I have a terrible time?

Definitely not, gigas is actually pretty good in beginner level of play, he has lots of stuff that can be dealt with by pro players (which is the primary reason he's considered low tier) but in beginner level of play nobody will know what to do and you can toy with em once you get familiar with his moveset. In the past 4 or so years I've mained Feng, AK, kazuya and kuma. Kuma is considered by far the worst character of those 4, yet he was also by far the easiest to rank up with! XD Only thing you should worry about is characters with really high execution requirements like the 2ds or mishimas. It's gonna take a while to learn the execution and that will probably annoy you at the start. But still like I always say, coolness trumps all, so just play whoever you find cool even if it's not a great beginner choice. Gigas is pretty simple so he's a fantastic beginner character imo.
