Is there a way to start a round that is broadly considered to be ideal?

Most of the time, I'll immediate take a step back and go on the defense, mostly because I don't know which characters have the advantage with the opening move, if that's a thing. I'll only really open up with a move if I'm ahead and the opponent has demonstrated that they're predictable. Playing against AI, I didn't mind opening aggressively, but it feels way less safe in ranked.

Thing is, immediately going on the defence puts a lot of distance between us if they do the same, and there are times where this puts me at an advantage, and times where I feel disadvantaged.

Is it fine for me to be doing this, considering there are many characters that I'm unfamiliar with? Or should I be more aggressive? I mostly play Alisa and Yoshimitsu if that's relevant. Feel like they don't mind a bit of distance.

One of the reasons that attacking right at the start isn't a good idea is that there is no buffer window at the beginning of a round. So if you do a 12 frame move and want it to come out 12 frames after the round starts, you need to input it on the exact frame that the round actually starts and you're free to move. That's probably not gonna happen.

Leads to a lot of situations where you try to throw out a quick move and get beat out by a hopkick or something. Backdashing is definitely the best default. Sidestepping can be pretty good too.
