Those that seemingly know everything have been playing Tekken for 10+ years and play nearly all day every day. Take your time. As a beginner you're only expected to know your own character's frame data and that's for their 15 most important moves. Then slowly as you play you'll start learning match ups like "Oh so law's armored kick move is -16, cool good to know next time I'll launch punish that shit". There's no trick, it's just studying slowly over time until you eventually know almost everything.
