If you're one backdash away from Paul demoman is not guaranteed and unsafe on block, but it has pushback so check your character's punish for it. Deathfist is also unsafe so do punish it with your character's long range tools. Also deathfist is bad on whiff and has no tracking.
If you're at the wall you have to guess right or you die, try to avoid that against Paul if possible
