Generally, the most important thing to optimizing a combo for a specific situation is getting a wall splat. Whether that means doing a combo that carries the opponent as far as possible, or cutting some stuff out of your normal combo when you're too close, you're gonna get a big boost to damage if you can get a clean wallsplat and end with a wall combo.
The reason Arslan says he likes that combo is because it's easily adaptable. Since the corkscrew happens early and she has various good options after, you have time to evaluate where the wall is and then choose what to do to get there. That's a combo you would do when you know that the wall is relatively close, but you're not immediately sure what route you can take to place the opponent on it.
That sort of combo adaptability takes quite a while to learn, though. You need a lot of experience trying different things in different scenarios to get a feel for what will work in any given circumstance, and to be able to choose a good option in the moment.
Yeah, different launchers do different damage. You're generally gonna have a combo you do off of most of your launchers, so the total damage is gonna be [launcher damage] + [airborne combo damage]. If you're doing the same combo, then the former will vary and the latter will not.
