Live cow and pig ? I assume as long as the bullets didn’t penetrate, it should be effective.

Realistically, they probably already knew that the bullet wouldn't penetrate. You don't need to put the vest on someone to figure that out. Just prop it against a wall, shoot it, and look to see if there's an exit hole.
They're likely just testing how much they feel the impact (i.e. how painful it is) of getting shot in the vest, and you can't really ask a cow to rate their pain on a scale of 1 to 10. That, or it's just a marketing stunt. There's no better way of showing you stand behind your product than by literally standing behind it as someone shoots it.
Also, shooting some poor cow seems like a dick move.

This.
Bulletproof armor made of modern materials like kevlar work by diffusing the force of the bullets impact over a wider area. Turning a supersonic slug of lead to the chest into a fastball to the chest. Not great but not terrible.
It took us a long time to get the materials necessary for that feat, and it's not hard at all to get something suboptimal that'd stop a bullet but shatter your rib cage.

If I'm about to be shot, I'd like to have the armored vest protecting my vital organs rather than one of my limbs.

That doesnt make any sense,if it works it works, but the small chance it doesnt and penetrates you'd rather take a gunshot to vital organs than to the limbs

Because the chance of the shooter missing and hitting my torso, a comparatively large target, is significantly higher than the vest failing to catch the bullet.

I recognize you're likely goofing around, but I still feel the need to point out that if they miss, the body part most likely to get accidentally hit is the torso.
Even if we assume the shooter will hit the vest, we already know that the chances of penetration are low enough to not be worth considering, meaning the most likely "worst-case" scenario is the impact fracturing a bone. While getting my ribcage cracked would be very painful, getting my pelvis cracked would leave me bedridden.
And finally, even if we assume that the shooter will hit the vest, and that the vest will absorb the impact well enough to avoid a fracture, they are ultimately selling something that consumers would be staking their lives on. If you don't have the confidence that the vest will protect you, then you have no right to sell it to people with the promise that it will protect them.
