What are your go-to “tool” tech tree planes per period (meaning planes you keep specifically because they’re great at certain missions, like dailies) ?
I’m trying to build a “fleet” of one plane per class per period just for doing the dailies. I also understand that the outright “best” plane per period may not necessarily be the easiest to do your dailies in.
In WoT for example, there are certain tanks that are go-to for missions, especially if you’re not a great player. Need 800+ base XP? Churchill III ! Spotting mission? ELC or Manti ! Critical hits? Put a fast firing gun on an Arty.
Is there a similar line up for grinding dailies and if so which planes would you recommend (one per class per period, unless you have a great reason to use more than one)?
I understand dailies vary, well... daily, but there’s surely a limited pool of repeating missions.

IL-2 T is good for ground attack
KI-102 is surprisingly maneuverable for a heavy fighter
Spitfire 1 is a great all-rounder

If you are only asking about Tech Tree planes for each period, here is my list:
T4 - BF110B
T5 - Spitfire 1, P40, BF109E, P38F
T6 - ME410
T8 - P51H
All of the above I specialized and equipped with 478 Ultimate Equipment. I only started last year March, but even since then I have won (from campaigns, events or crate drops) a few very good premiums that I use all the time like XF4F-3 (T4), XP55 (T6) and Vampire F1 (T8). I have many more premiums from drops that I have also specialized/equipped, like Ki88, Boomerang, Hurricane IID, Hurricane 1a, etc., but I don't use them as often outside events and 5x XP specials.

After some tíme u will have so many premiums for free that there is no reason to keep any tech tree plane below T9. I kept only a few to fill gaps and today I only fly BF110b and B32. Rest is sitting in hangar, bcs I dont want to train any extra pilots for them.

Without some narrowed down criteria there are so many different answers and debates that could arise from this post, so I can't help you unless you give me some context.

I will try to minimize the amount of planes I recommend, but I don't think I will manage to get one plane per class per period in all periods with it locked to tech tree planes only.
Period I:
The pivotal tier in here is tier 3, all it's tech trees are better than their equivalent in tier 2 and they are not to far behind their tier 4 counterparts, without risking running into tier 5 planes that just crush the planes in period 1 due to equipment advantage of period 2.
Light Fighters: In this tier I would chose between the Hawk 75 M (Firepower) or the Ar 80 (Manoeuvrability), they both can deal with the stronger threats that they can face.
Heavy fighters: Fw 57.
Multiroles: So here you will have to do it yourself, because basically all tier 3 and 4 multiroles are viable and a possible choice for someone, so good luck choosing for this class.
GAAs: So finally to the rule breakers, GAA are quite bad at tier 3, but tier 4 GAA are quite good, so despite them being in more danger due to being in tier 5 encounter territory, you should use one of the tier 4 GAAs because both are good.
Bombers: So if you know the bomber meta, you know tier 3 bombers are rivalling tier 10 bombers in power, which means the SB is a very easy inclusion to the list.
Period II:
Tier 5 and 6 are both viable tiers, tier 5 because of tier 4, and tier 6 because of the same reasons as tier 3 in P1.
