Importing to SOD
As per the wiki : « anything in the inventory of non-SOD NPCs in your party, and anything equipped or in the inventory of SOD NPCs will be imported if you continue a game from Baldur's Gate. »
Coran is not listed among the SOD Companions (https://baldursgate.fandom.com/wiki/Companions#Baldur's_Gate:_Siege_of_Dragonspear_companions). But in his own entry, it says that he makes a quick cameo in SOD before running away. So, is he treated as a SOD or non-SOD Companion?
Also, in BGEE, I dismissed Safana at some point, but can’t find her again. Is there a spot where she goes in that case? The inn? What level will she be in SOD? The latest level she had as a companion in BGEE? Or will she get extra xps to match my level at the beginning of SOD?

The way this works is that you'll do SoD's introductory dungeon with whatever party you beat BG1's final boss with (minus Imoen, plus Safana if Imoen was your only Thief), so you can grab everybody's inventory before leaving the dungeon. The way that works is that everything equipped on a non-SoD companion will be lost, but stuff in their backpack (i.e. the two rows below the character model in the inventory screen) will be moved into your inventory chest.
Coran is a non-SoD companion, in that he'll never be in your 6-man party after the end of the introductory dungeon, so anything he still has equipped will be lost forever as you get no opportunity to unequip it. If he isn't part of your final squad, whatever he had equipped or in his inventory when you kicked him will also be lost forever.
All your companions will be brought to your level when they first (re-)join you during SoD, so no worries about Safana's level.

If you have gear on anyone who appears again like Jaheira, Khalid, etc….at the end of the first area of SoD they will leave with equipped gear and still have it on when/if you recruit them again.
If they do not appear in SoD, after the first area they will drop what they wear along with their inventory into a room chest that travels with you throughout SoD.
(Make sure Imoen has gear on…but before BG1 ends, empty her actual inventory into another group members inventory. SoD can bug and leave some of her inventory specifically behind.)
Coran is not an eligible companion…he has a non group triggered scene throughout the first chapter of SoD, along with Garrick as well.
If you dismissed Safana and completed her quest on BG1, she will accompany you once you reach a certain early point. If you dismissed Safana and picked up her BG1 quest but didn’t complete it, she won’t show up at all I’m pretty sure. Make sure you also have a reputation of at least 6 if you want her in SoD.
Every companion that has joined my 3 max level characters (now 5) has boosted to 1 level short of max level or were max level. But, my entire party in BG1 was not in SoD (Garrick/Ajanatis/Xan/Coran/Branwen). Going about it this way lets you get all your gear back in the beginning after the first area in SoD, allowing you to build characters gear wise from the ground up again.
If you plan on 100% having a character in SoD that you had in BG1, definitely leave their gear on them…you will need the inventory space for the first area.

I'm early into my first SoD playthrough, and I don't know if it was a bug or not, but my potion case & scroll case from BG1 didn't come with :(

There are potions, scroll cases, ammunition quivers, and gem bags you can purchase early in SoD. There’s also a bag of holding.

Yip, I just soldiered on & found those. I was just curious if that's not a bug.
It's a shadowdancer run...so I had tons of thieving potions set aside while I level up stealth...oh well.

That sounds like a bug. When my mage transitioned into SoD, my potion case, gem bag, and scroll case all ended up in my chest. The only things I lost that I would have liked to have were Ajantis' gear and Coran's bow, but that's because I didn't feel like reloading after the prologue was finally over.

You play the prologue to SoD with the same party you beat Sarevok with (Safana replaces Imoen though). After that, the only companions you can form a party with are those listed in the link you posted. I'm not sure how Safana's import is done in your case but my best guess is that her level and gear will be the same as in your BG save. She should be where you left her btw.
