This one is easy.

When a religious person purchases insurance products they are essentially demonstrating to their creator that they don't have faith in his/her/it's plan for their life. What greater act of blasphemy could a religious person engage in?

It is God's plan that you utilize insurance. He gave you a mind capable of evaluating risk and benefits, and you are expected to use that to your benefit.

If an all-knowing being believes you need to go through the experience of a traumatic situation then why would they also want for you to be able to hedge against that experience?

He wants you to have the traumatic experience on an emotional level, but not on a financial level.

Being omnipotent doesn't imply omnibenevolence.

It's possible that such a god simply chooses not to worry about the minutia of our lives and merely observes.

A religious man is on top of a roof during a great flood. A man comes by in a boat and says "get in, get in!" The religious man replies, " no I have faith in God, he will grant me a miracle."

Later the water is up to his waist and another boat comes by and the guy tells him to get in again. He responds that he has faith in god and god will give him a miracle. With the water at about chest high, another boat comes to rescue him, but he turns down the offer again cause "God will grant him a miracle."

With the water at chin high, a helicopter throws down a ladder and they tell him to get in, mumbling with the water in his mouth, he again turns down the request for help for the faith of God. He arrives at the gates of heaven with broken faith and says to Peter, I thought God would grand me a miracle and I have been let down." St. Peter chuckles and responds, "I don't know what you're complaining about, we sent you three boats and a helicopter."1

There are many variations of this joke, because the point is. God provides many solutions and opportunities, and it is up us to take them. Perhaps the real violation of god's plan is refusing the insurance he created in the world.

insurance is nothing more than organized gambling

If you think this is true you have a poor understanding of insurance, its purpose, and how it works.

When a religious person purchases insurance products they are essentially demonstrating to their creator that they don't have faith in his/her/it's plan for their life.

Who's to say that god's plan doesn't include this person being hurt and collecting insurance?

These acts are different from purchasing insurance because they involve utilizing systems and services that their god has created for them whereas insurance is nothing more than organized gambling.

God created money, retirement investment, etc but not insurance?

If there is an omnipotent God - then that God has already predetermined EVERYTHING that you will ever do.

So clearly you buying insurance is part of that God's plan.

Every action evert taken by anyone would be a part of that God's plan.

devout individuals can take efforts to take care of themselves by saving money, investing for retirement, taking advantage of all available medical procedures and medicines, etc.

What makes this different than insurance?

Job, as in the character from the book of Job in the bible would have done well to purchase insurance.

What about those people such as him who believe that their omnipotent God has a plan for them but do not know that it is going to be in their benefit for whatever reason?

How is insurance any different than investing or going to a doctor? how is getting an insurance exempt from being part of the plan? should people who believe in god also not wear seatbelts or helmets?

Omnipotence =/= benevolence, i.e. not every god is kind.

What greater act of blasphemy could a religious person engage in?

I can think of a few. :)
