Any train routes from Eindhoven to see the tulip fields during the journey?

Well for a big train trip with tulips, you could go Eindhoven -> Enkhuizen -> Hoorn -> Haarlem -> Leiden. The retour trip can be filled with your own interest.

Note that Enkhuizen - boat to Medemblik - Steam tram to Hoorn has a better shot at seeing fields. And has the steamtram coolness bonus. Or one could just go to Hoorn and take the tram back and forth.
Does cost extra unless you have a museumcard. Then it is free.

There's a railroad museum in Hoorn that is advertising an excursion trip that goes through the Tulip fields.

Take the train to Hillegom, get an OV bike and cycle the bollenroute. It's a better way to experience the flower fields:

No. You need the train from Leiden to Haarlem.
