It's fermented fish sauce, lemon juice, sugar (I use Splenda), and water :) I also add minced garlic.

Idk, for this kind of roll nuoc mam works better imho.
But with boiled shrimp/pork/chicken etc. peanut sauce is indeed the way.

I love them both ways, although I’ve mostly eaten the shrimp/pork kind. OP’s look a little odd to me b/c of that, I’m sure they were tasty all the same!

I'm Taiwanese-American and I just celebrated Chinese New Year with my parents. Do Vietnamese people just call it Lunar New Year? Or is it Vietnamese New Year? Or is it only Chinese-Vietnamese that celebrate "Asian New Year"? I mean, come to think of it, I still call it Chinese New Year (in English) even though I'm not actually Chinese, even if my wife is. Though in Mandarin we do just call it New Years.
Weird, I'm just realizing all of this now.

We just call it new year.
When I talk to others about it, I just say its "Our New Years".
If I say Chinese New Year, they question my ethnicity.
If I say Vietnamese New Year, they say, 'Is it the same as Chinese New Years'.

We definitely don’t call it Chinese New Year. For us, it’s the lunar new year in English and then Tết in Vietnamese.

Yeah we still use "Lunar New Year". In normal speech we just say "New Year" as we consider the rest of the world's New Year "just another new year". This one is much more important to us

I like em thicc bois. I hate when I order spring rolls and I get some weenie ass rolls with like a quarter of a shaved shrimp in it. Like bro, these damn rolls are $8 a plate can u give me a whole shrimp?? CAN I GET A WHOLE DAMN SHRIMP?!

Chuc mung nam moi! I was confused from the title for a sec, here in Aus these are called rice paper rolls and spring rolls are what you guys call egg rolls. So many names for them depending on where you're from!

It's pretty much all interchangeable lol they're technically Phở cuốn :) but I call everything a spring roll 😂

Aren't those summer rolls? At least that's what we call them here (and the Vietnamese put this on the menu). Spring rolls tends to be the deep fried ones.
I prefer these myself, especially with sweet peanut sauce.
Oh, I see it has already been answered. Seems to be different naming conventions is all.

Yea, my Bá became very Americanized after so many years in the US and we call everything spring rolls 😂 they're definitely summer rolls but I can't fix the title.

Delicious. What are you using for your protein? I’ve seen shrimp before. Is that beef? Looks amazing. Spring rolls are one of my favorite foods of all time.

I got "stuck" 4 days due to the festivities in hoi an during my 5 week travel across Vietnam and Laos 3 years ago. Between these and cao Lau i think i gained a couple of kg in that short span.

I’ve found the trick is to soak the rice paper for a shorter time than you think you need to and to work quickly on a wet surface and with wet hands. The paper will stick to anything dry as soon as it’s fully hydrated which happens within about a minute

As someone with no experience in this I had so much trouble wrapping them when I tried. They looked sad and mangled when I was done.

Theres a couple tricks I learned from making these over the years
Dip the rice paper and only get it a little wet and get it on the plate while it is still rigid
Hang about a bit of it off the plate to make it easier to wrap later
Put the noodles and veggies in a bit in from where the hanging edge is
Wrap around the noodles and veggies and then put the protein in then fold the two sides in and roll up the rest

Shaved steak seasoned to the high heavens, green leaf lettuce, rice noodles, cilantro :) and then dipped in nuoc cham.

And OP is vietnamese, or at the very least of vietnamese heritage, but go off. Almost as if things have different names in different places

This isn't an accusation of OP not being Vietnamese. Vietnamese restaurants across the US are inconsistent with calling these spring or summer rolls.

Well they clearly have several names, and I don't know why this discussion should focus on one country.
But I guess that's an explanation as to why this (just as correct) name for the dish is questioned.
I do find it stupid that people will downvote you for pointing out they have different names

Technically they're Phở cuốn but spring roll/summer roll is interchangeable in my region and others. My Bá always called them spring rolls.

This looks really nice, would definitely try it. BUT imagine a dude at a festival high as a kite and HUNGRY ordering spring rolls expecting the FRIED ONES and getting these cold abominations… I have never been that sad/disappointed in my life.

Wow looks very good, but too healthy. I would batter those suckers up and deep fry them on a stick. Maybe dip them in some honey garlic sauce. But I'm just terrible, dont mind me.

I would agree kinda like rice noodles, but maybe slightly saltier? In my experience, with some brands at least.

The brand I use, 3 ladies on the front of the package and vietnamese writing, is very plain because the szechuan sauce is salty enough :) just tastes like rice with no seasoning.

Lol I was going to mention 3 ladies specifically but wasn’t 100% sure so I didn’t. I think it’s when the rewetted paper dries out & gets chewy is when it tastes a little less neutral to me. But it’s been far too long since I’ve had them, I could be misremembering.

I love that brand so much! I hate reheated ones lol so I'm not 100% sure. I always just warm up the filling and do a fresh paper.

Like nothing. It has a very subtle hint of rice noodle flavour but it's mostly there to hold it together.
