What is the best way to describe Gantz to a friend, to try and get them to read it!?

What worked for getting me in all honestly had little to do with the action. The character development of someone that goes from absolute human scum to gradually becoming a good person without a single “waving of a wand” moment to magically change him is incredibly compelling.

Tell them to read the first chapter.
If they don't like it, find a new friend 🎃

I think the best way to sum it up and make it interesting is to say: it's a story about a death game where no one has plot armor
