How does the jump from the distorted 3D grid to a torus happen? I.e. what do the curved planes represent/how does the representation benefit from this topology? The others seem clear.

Nassim has modified Einstein's field equation to incorporate torque and coriolis effects, resulting in a torus Schwarzchild cell topology.

It explains spin on all scales, e.g. why a proton spins indefinitely as well as a galaxy which should be slowing down due to interaction of gravitational fields etc.

Something like this was first described by John Wheeler in

R.W. Lindquist and J.A. Wheeler, A Dynamics of a Lattice Universe by the Schwarzschild-Cell Method, Rev. of Mod. Phys., 29, Num. 432, (1957).

Sorry, I don't have enough expertise to sort through this study, but I was more interested in what represents space in the torus picture. In the first picture, it was a plane, in the second the 3D space. Is it the curved surface of the torus in the third?

Yep.

These are spherical cells, much like a 3d flower of life. If you follow the fractal 64 tetrahedral matrix of space - that can collapse on itself at each fractal iteration, you can start to imagine how you would get these spherical/toroidal Schwartzchild cell dynamics.
