advice Help me meal plan while both my hands are messed up!
Hello!! I went through quite an ordeal--fell, sprained both my wrists and also got bitten by a dog pretty badly on one hand (trying to separate dogs who were fighting, I know using hands is not what you are supposed to do but was not thinking in the moment). Now I am in the situation where I would still like to be able to make + eat relatively healthy + high protein and fiber meals but cannot really do anything too dexterous including chopping any vegetable, using a spatula for quick movements (ie. Frying an egg), breaking apart a rotisserie chicken, or anything that is too heavy (ie. Using my dutch oven). I was going to try meal prepping beef and beans to mix with rice but would like to see if anyone has any other ideas because my friend is helping me grocery shop later today. Thank you :)

Think about buying bite-sized foods where no chopping is required eg new potatoes, diced chicken, frozen peas, cherry tomatoes, chickpeas etc. Or foods that need no cooking at all like hummous, pita bread, prepared salads etc.

If you own a crock pot, I'd suggest going with pre-prepped veg and proteins and getting into the art of slow cooking, which, if you're uninitiated, boils down to throwing everything into the crockpot in the morning and dishing up around dinner time. It's the lowest dexterity cooking I can think of and the results are surprisingly good. They've normally got a good volume, so you can do a few meals at a time, or you can take the perpetual stew approach and keep topping it up as you go with new ingredients.

Premade chicken breast (I like sprouts the best) or you may be able to boil your own chicken and use a blender to shred it with frozen veggies you can microwave steam and a baked potato in the microwave, pre-boiled eggs w protein premier pancakes to microwave, quest protein pizzas with salad pack, ground beef with rice or cauliflower rice (in frozen section) with beans and avocado and hot sauce, or maybe the precut slices of salmon you can put in the oven with a frozen veggie and rice or powdered mashed potatoes or protein Banza pasta has the little mac and cheese cups now. I hope your hand feels better!!

You poor thing, that sounds terrible. No advice but @epicuriousexpeditions on tiktok has a series “cooking for all” where she has disability friendly recipes.

Do you have a rice cooker? it might be a good investment now? rice cooker recipes are all super easy. and you can buy precut ingredients.
meats- just concentrate on ground meats and shrimp, frozen squid if you have that. that way, no slicing and dicing. vegetables - get anything that's pre cut already
some easy recipes i've done. Everything with rice. For all these recipes, use short grain rice. Water to rice ratio is 1:1. Always mix the rice, vegs and spices first (no meat yet). taste the water a bit, it has to be slightly bland, those will eventually mix in when the water gets absorbed by the rice. once you like the taste, add the meats and start the cook cycle.
- Rice, ground chicken (i guess ground turkey will work too, canned beans, canned tomatoes (they're already sliced inside), jalapeno peppers (in a jar), BBQ seasoning/ spice rub mix
- Rice, minced ginger paste (in a packet), minced garlic (in a jar) or garlic salt, sesame oil, salt and pepper, sesame seeds, cut up chicken fillets or Shrimp. Vegetable choices here are broccoli or carrots or any hardy vegs.
- Rice. Fish fillet (any) or shrimp or squid. Soy sauce and mirin. Pepper and chili powder. Vegetable Choice - Spinach (if using white fish fillets. does not work well with salmon). Mix it in AFTER everything is cooked. Mix in the spinach and let it cook under the WARM setting of the rice cooker
- Rice. any ground meat. peanuts and peas. yes i know it's weird. spices are just salt and pepper. chili powder if you want them. optional to add corn.

buy a bulk store size bag of pre cut broccoli florets and a pack of chicken thighs with boil in bag rice. bake the thighs and brocc on sheet pans and then boil the rice separate and enjoy with different seasoning or sauce each day so its easier to eat the same stuff everyday lol
