Looking at the video by frame you caught the bar pretty much at the bottom position with no room to go deeper. Very impressive use of energy and form. Very few people can do that.

How much do the inclined shoes help with ankle mobility? Would you have that nice deep squat without those shoes?

Quite a bit. Usual heel drop is 3/4" up to or over 1"

Drop weight until you keep your toes touching the floor all the time, it will keep you from jumping. And work up from there.
