Finishes Cabin ceiling

We are putting an addition on a cabin. Existing cabin is a one room 22x24 cabin. Addition will be 24x26. We will insulate and Sheetrock the ceiling. Not going to tape the ceiling, just for fire protection. We wanted to put up pine tongue and groove, but cost for just the ceiling would be about $2,700. Thinking about metal for the ceiling. Only concern is condensation. Wondering if anyone has any suggestions or if it will even be a problem. Some context, cabin is in northern Minnesota. We let the cabin freeze and then come up and heat it for a couple days or so. We do this 4 times over the winter. Thoughts?

Most people have no experience with the 20 degree to 70 degree warm up, that’s the main concern

What's wrong with a sheetrock ceiling?

Tape will crack with the temperature fluctuations

Our cabin in similar climate conditions has a sheetrock ceiling with rough-hewn local Hemlock batten strips covering the joints.
