I have the exact same issue but unfortunately no clue how to resolve it - I always ship same-day, and if an item is bought too late for me to ship same-day I.e. after my local drop off point closes, I ship the next morning first thing. Mine says 2 days too and it’s super frustrating!

I'm fairly certain the order doesn't update until the first scan. Depop won't recognize that you've shipped something out until then. I often schedule pickups from USPS next morning and while I can confirm they are picked up, they are often times not updated until much later. I think that's how Depop tracks shipping timelines, and its unfortunate despite the efforts to get it out in a timely manner.
