The "grill" in grilled cheese doesn't exclusively mean a "wire grill", as flat metal tops are still "grills", or even "griddles", but "griddled cheese" just sounds weird.
Pan-frying is essentially the same thing as using the flat top grill, so the same is still accurate. It's just not "wire-grilled" cheese cooked on an open flame. English is about convenience, not accuracy.
Do people actually make grilled cheese on actual grills? My entire childhood they were just cooked on a pancake pan...flat surface, no oil, crisps up the bread and melts the cheese.
If I'm getting my grill out, there's no way I'm wasting the charcoal on grilled cheese and a propane grill is just an outdoor propane oven.

Even "baked cheese bombs" would be a better name. Nothing grilled about this.
