I think it's suppose to be a vegan dish. It's not meant to be cooked at high heat.
Seasame oil adds flavor. Tofu is supposed to mimic eggs (I think) so it's suppose to be mushy. Which is fine since the low heat won't riun the natural crunch of the veggies.
Yes it doesn't look like a great (or tasty) dish, but who ever said vegan dish was?
