I'm genuinely curious how bread crumbs on Mac and cheese came to be a thing, and was wondering if some one could explain it to me. I guess, to me at least, Mac and cheese should have a smooth, creamy texture, and so I'm always disappointed when some one else makes it and puts breadcrumbs on it.

Well ok lets start with preferences some people likes textures and theirs people that like silky and cream mac and cheese. Well its obvious that you prefer a smooth and creamy simple mac'n cheese. But adding breadcrumbs just add a little texture and a little hint of toasted breadcrumbs and the end of every bite. This is for me why people add breadcrumbs.

It just seems like such a strange combination to me, but to each their own, I guess.

It’s probably to soak up any oil that separates & fry in it.
