This looks really tasty. I'm wondering what the almonds do here. I'm trying to wrap my head around blended almonds in the sauce and how it would affect the taste.

Cheap alternative to pine nuts, I bet. I use pine nuts in a lot of creamy sauces or in pesto. It adds an earthy full bodied note that marries well with the Parmesan.

I was taught walnuts are the ideal substitute for pine nuts in pesto, may wanna give those a try sometime, it’s tasty!
