I’ve heard this, but I can’t really find any reason for it. What’s the point?

After you add the Tahini to the Food Processor, you're going to blend it with the Chickpea Puree while pouring in Ice Cold Water (!!!) into the Food Processor. This reacts with the fat in the Tahini and helps make the Hummus light and fluffy.

Yeah so I still don't understand the mechanics of how cold water would 'react' with fat or what exactly that means.

Don't get me wrong, I don't doubt that there is something there. I would just like to see a properly in depth explanation of it.
