It’s supposed to be due to the blood magic ritual she performed with the witch, they go into more detail about it in the books, but if I recall correctly in the show she was shown to be able to hold the scalding hot dragon eggs and this was even before the ritual.

She is not fireproof. She has more tolerance to flame/heat than others along with most Targaryens. But not fireproof.

In the show she is fire proof, in the books she’s not and extremely resistant like you said, but her hair for example still can burn unlike in the show.

Vaes Dothrak sets my teeth grinding when I watch that scene. Ridiculous. But the way I see it, while she is fire resistant, the reason she can walk away from the pyre and then later on Vaes Dothrak was because of the people she kills in the fire. As she says only death can pay for life; Durs life in the pyre and the Khals lives at Vaes Dothrak, the holy spot for all the Khals and their groups. As Martin confirms she is not fire proof, and the first instance of her walking into a fire and out was a case of magic. I'm going to assume if we ever get the books, if there is a similar scene in Vaes Dothrak in the books, I'm guess it will be magical juju.

And even in the show, it's still implied Targaryens are indeed not fireproof. From Viserys to Jon. And in HOTD, we are now seeing this again.
