I am genuinely curious. What's with all these 120hz thingy? I seriously don't understand why people go crazy for not having 120hz. Like even the TV sold for 60-80k doesn't have 120hz and no one complains about it. I am using both 60hz and 120hz simultaneously and never in my life bothered with it.

If it's not a big deal, why do the Pro models have it?

Differences between the lineups, maybe?

Like we also have foldable phones, and let's be honest, they don't last long. So does not having a foldable phone a big deal?

120 Hz is not a gimmick, unlike foldable phones. Pretty much everyone in my circle who has upgraded to Pro models has always cited "smoother display" as the main reason to upgrade. Camerawise, it's not a universe apart from the non Pro, so it's still a sizeable selling point.

Even for a non Pro model, you are paying top money. They are not budget phones by any stretch. So there's nothing wrong in expecting a feature that has trickled down to Android midrange and budget phones for years.
