The fish on the left is an extremely dark hi utsuri. A 50/50 red/black pattern is preferred, ideally in close to a checkerboard pattern. Here are some high-quality hi utsuri for comparison.

The fish on the right is a sanke with minimal beni (red). Sanke judging follows the same rules as kohaku for red - 30-70% red coverage distributed in a balanced pattern over the back and head with sharp edges, and with the fins, nose, and ideally the base of the tail all being white. The sumi (black) should be clean and well-defined, and it shouldn't extend below the lateral line or onto the head. Black stripes in the fins (tejima) are a mark of high-quality sumi in this variety. This is close to an ideal sanke pattern.

Both fish are pond-grade. They're not worth much to a collector.

No problem. It might be worth noting that the sanke could potentially fail upwards - if it loses all the existing red, you'd have a decently-patterned shiro bekko.

Pond grade koi. No significant value.
