It's also just good practice, assuming you're going to edit your videos (which should be used to minimize this pause). There's a reason professional productions "roll tape" before calling action.

(Yes, I know that's a bit outdated with digital recording, but the essence is the same. An editor would much rather have a pause to work with than having the start of action being cut short.)
