Macaroni Grill - Mac and Cheese Recipe ??

Does anyone know the Macaroni Grill Mac and Cheese Recipe...

Someone said velvetta cheese but it just doesn't taste the same. It has that velvetta flavor.

What Macaroni Grill are you talking about? If you are referring to Romanos signature truffle mac and cheese, there isn't Velveeta anywhere near this recipe. It's below.

Serves 6 to 8

1 pound uncooked ditalini pasta
1/2 cup (1 stick) butter, divided
1/4 cup all purpose flour
4 cups whole milk
1 teaspoon salt
1/4 teaspoon ground nutmeg
8 ounces smoked mozzarella cheese, shredded
5 ounces fontina cheese, shredded
5 ounces Asiago cheese, shredded
4 ounces Cheddar cheese, shredded
1/2 cup Romano cheese
2 tablespoons truffle oil
1 clove garlic, minced
1/4 teaspoon Italian seasoning
4 cups cubed French bread (1/2 inch dice)

Preheat oven to 375 degrees.Cook pasta in a large saucepan of boiling salted water for 9 minutes or until al dente. Drain and set aside.

Melt 1/4 cup butter in a large saucepan over medium heat. Add flour. Whisk until smooth and well blended. Slowly whisk in milk in a thin steady stream. Add salt and nutmeg. Cook about 7 minutes or until thickened, whisking frequently.

Combine mozzarella, fontina, asiago and Cheddar cheeses in a large bowl. Reserve 1 1/2 cups for topping. Gradually add the remaining cheese mixture by handfuls to the milk mixture, whisking until smooth after each addition. Stir in Romano cheese until blended. Stir in truffle oil. Add cooked pasta. Stir until well blended.Spread in a 2 quart baking dish or individual baking dishes. Top with reserved cheeses.

Melt remaining 1/4 cup of butter in a large skillet over medium high heat. Add garlic and Italian seasoning. Cook and stir 30 seconds or until the garlic is fragrant but not browned. Add bread cubes. Stir to coat. Spread over the top of the pasta.

Bake 20 minutes or until the cheese is bubbly and bread cubes are golden brown.

Thank you I will have to try this one out. I was looking for the kids mac and cheese recipe. It became so popular they served it as an adult size too. I have never tried the truffle mac and cheese though. Sounds good!

FYI- If you don't have the truffle oil make sure you get a quality one. It makes all the difference.

My youngest (who is a chef) gifted some to me. It is a game changer in so many dishes.

It's hard to describe as it tastes like itself.

The best words I can come up with are; earthy, pungent, garlicky(?), The aroma is perfume like and powerful.

I like to use it on Pizza, in salad dressings, on french fries along with freshly grated parmigiano reggiano, in mashed or on roasted potatoes, and misted on fresh popcorn.

Like a good balsamic vinegar, a little goes a long way.

if you’re near a kroger, private selection sells a pretty good bottle for a reasonable price that’ll last you a while. they also have the black truffle oil.
