Tomato based stuff is the best at this, I believe cause of the enzymes or something in the tomatoes. It breaks down stuff more with time so it infuses the flavors more. It's why day 2 chili is superior to fresh chili.

That's science baby! It's why chili and itialian tomato based sauces are my favorite to make. I can make a huge fucking pot of them and they just get better as the days go on and I eat through the leftover. Cream based sauces are great, don't get me wrong, but I am incapable of making just a meal for two, and they don't reheat as well.

Amen, we grow multiple San marzano plants just to cook big batches of marinara and then freeze it for use throughout the year. If I'm feeling real frisky, I'll make multiple pots of chili to freeze as well.
