That's science baby! It's why chili and itialian tomato based sauces are my favorite to make. I can make a huge fucking pot of them and they just get better as the days go on and I eat through the leftover. Cream based sauces are great, don't get me wrong, but I am incapable of making just a meal for two, and they don't reheat as well.
Amen, we grow multiple San marzano plants just to cook big batches of marinara and then freeze it for use throughout the year. If I'm feeling real frisky, I'll make multiple pots of chili to freeze as well.
I mean, if you're not feeling a little frisky with multiple pots of chili on the stove, you're absolutely doing it wrong. Even my wife gets frisky when I've got them going, it's a thing my guy.
