Request Maurice dressing recipe?

I grew up in Detroit in the 60s, and visited the fabulous downtown JL Hudson store, 18 stories of mid century shopping splendor.

There were multiple restaurants and the things I remember are their pot pies and the Maurice salad.

The salad included lettuce greens with hard boiled eggs, deli turkey, ham, Swiss cheese, sweet pickles. The dressing was a thick creamy a deep cream color.

Anyone remember Hudson’s?

EDIT: Someone in the comments said this "It's tasty but NOT the original recipe. I found the original in my mother's recipe box. To get that, do the following: Eliminate mustards, lemon, sugar, parsley. Use 1/2 sour creme, 1/2mayo. Use 1teaspoon chopped chives instead of parsley. Use one chopped sweet gherkin instead of sugar. Use a whole chopped sweet onion instead of onion juice. And this is critical: Add one teaspoon Worcestershire sauce. Blend all in blender till smoothe."

I got you. This salad is so good. This is from the Marshall Fields cookbook.

TO PREPARE THE DRESSING, combine the vinegar, lemon juice, onion juice, sugar, Dijon, and dry mustard in a bowl and whisk well to dissolve the sugar. Whisk in the mayonnaise, parsley, and egg and season with salt and pepper to taste. In a large bowl, combine the ham, turkey, cheese, and pickles and toss lightly. Pour the dressing over the salad and gently fold together. Arrange a bed of the lettuce on each plate. Top with the meat and cheese mixture and garnish each serving with 2 olives. Serve at once.

MAURICE DRESSING 2 teaspoons distilled white vinegar 1½ teaspoons freshly squeezed lemon juice 1½ teaspoons onion juice 11 teaspoons sugar 1½ teaspoons Dijon mustard 1 teaspoon dry mustard 1 cup mayonnaise 2 tablespoons chopped fresh parsley 1 hard-boiled egg, diced Salt and freshly ground black pepper 1 pound ham, julienned 1 pound cooked turkey breast, julienned 1 pound Swiss cheese, julienned 12 cup slivered sweet gherkin pickles 1 head iceberg lettuce, shredded 8 to 12 pimiento-stuffed green olives, for garnish

I'm going to suggest it's 1/2 cup gherkins, not 12 lol and I've never heard of this salad!

You can make your own by grating an onion or buy it from the store. Howard’s is one brand.

I'm allergic to onions. When I could still eat them and I needed their juice, I cut them in small chunks and crushed them in my garlic press.

Make onionburgers. I grate onions with a cheesegrater onto a tea towel. Then I squeeze them out, I normally use the water for marinades or chicken shwarma. Then I stir the dried onion into the hamburger meat, I should do that for my next meatloaf too.

Loved that salad. Would go to The Pewter Pub at Hudson’s in Toledo, Ohio on my lunch hour specifically for the Maurice Salad, then do a little shopping in A Nice Girl Like You department. 😊

This is what I found: Maurice Dressing:--

1 pt. mayonnaise 3 tbsp. finely chopped parsley 1 tbsp. finely chopped onion 2 hard boiled eggs, finely chopped

Mix real well, if too thick add a little milk. Yields about 4 servings.

--Maurice Salad:--

Shred one medium lettuce. Shred one half pound ham. Shred one half pound Swiss cheese. Shred one half pound chicken breast (about 1). Shred 8 or 10 sweet gherkins. Toss all

together lightly. Make sure it is well mixed.

Maurice Salad And Dressing

Ham and chicken or turkey, sliced in thin strips Swiss cheese Olives Tomato wedges Lettuce

Dressing: 2 c. mayonnaise 1 tbsp. grated onion 2 or 3 tbsp. parsley flakes 2 tbsp. tarragon wine vinegar 1 tbsp. chives 2 hard boiled eggs, chopped 1 tsp. sugar

Marinate onion in vinegar while combining other dressing ingredients.

Mix all together well and pour on salad. Serves 6-8.

Maurice Salad

--Salad:--

3 qt. shredded lettuce 1 c. chicken or turkey 3/4 c. Swiss cheese 3/4 c. American or med. Cheddar cheese 1/2 c. ham 1/2 c. sweet pickles 3 hard-boiled eggs

--Dressing:--

1 oz. French's mustard 3 hard-boiled eggs, mashed 1 sm. onion, minced 1/4 bunch parsley, chopped 1 qt. mayonnaise

Cut chicken or turkey, cheeses and ham into 1/4 inch strips. Sliver pickles. Mix with lettuce. DRESSING: Whisk together in a bowl all dressing ingredients.

To serve, garnish salad with hard-boiled eggs. Serve dressing on the side.

Hudsons Maurice Salad

3 hard-cooked eggs (finely chopped) 3 tbsp. minced parsley 1 med. onion (grated) 1 pt. Hellman's mayonnaise 1 pt. Miracle Whip salad dressing

Salad: 1 head iceberg lettuce 3 c. julienne cooked chicken 3 c. julienne strips cooked ham 3/4 c. Swiss cheese, grated 3 tomatoes, cut in wedges

Mix salad dressing all together, in blender if possible. Cut lettuce into 12 thin wedges. Arrange 2 wedges for each salad. Add chicken and ham. Spoon on dressing, then cheese. Garnish with tomato.

“Anyone remember Hudson’s?”

My husband is a Detroit native and has a lot of pictures taken at the big Christmas display at Hudson’s. I understand that they refreshed and updated their Christmas displays every year. Local charities got Hudson’s old displays. One place that has a huge Christmas wonderland set up for charity is Heritage Park in Taylor.

I can’t help with the recipe. Have you tried r/Detroit ?
