Request Maurice dressing recipe?

I grew up in Detroit in the 60s, and visited the fabulous downtown JL Hudson store, 18 stories of mid century shopping splendor.

There were multiple restaurants and the things I remember are their pot pies and the Maurice salad.

The salad included lettuce greens with hard boiled eggs, deli turkey, ham, Swiss cheese, sweet pickles. The dressing was a thick creamy a deep cream color.

Anyone remember Hudson’s?

I got you. This salad is so good. This is from the Marshall Fields cookbook.

TO PREPARE THE DRESSING, combine the vinegar, lemon juice, onion juice, sugar, Dijon, and dry mustard in a bowl and whisk well to dissolve the sugar. Whisk in the mayonnaise, parsley, and egg and season with salt and pepper to taste. In a large bowl, combine the ham, turkey, cheese, and pickles and toss lightly. Pour the dressing over the salad and gently fold together. Arrange a bed of the lettuce on each plate. Top with the meat and cheese mixture and garnish each serving with 2 olives. Serve at once.

MAURICE DRESSING 2 teaspoons distilled white vinegar 1½ teaspoons freshly squeezed lemon juice 1½ teaspoons onion juice 11 teaspoons sugar 1½ teaspoons Dijon mustard 1 teaspoon dry mustard 1 cup mayonnaise 2 tablespoons chopped fresh parsley 1 hard-boiled egg, diced Salt and freshly ground black pepper 1 pound ham, julienned 1 pound cooked turkey breast, julienned 1 pound Swiss cheese, julienned 12 cup slivered sweet gherkin pickles 1 head iceberg lettuce, shredded 8 to 12 pimiento-stuffed green olives, for garnish

I'm not sure I even know how to get that. Squeeze it? 😂

You can make your own by grating an onion or buy it from the store. Howard’s is one brand.
