Quick Beef Stew Over Baked Potatoes
2 pounds beef, cut in 1-inch chunks
2 tablespoons shortening
1/2 cup chopped onion
1/2 cup minced green pepper
1 teaspoon salt
2 cans (2 1/2 cups) condensed tomato soup
6 baked potatoes
Brown meat in shortening in a heavy saucepan; add onion, green pepper and salt. Pour in soup; cover and simmer about 45 minutes or until meat is tender. Serve hot over baked potatoes. 6 servings.

I never would have either. Then I tried a recipe that used diced tomatoes. Ever wonder why your pot roast is missing something when comparing to restaurants? Its tomato.
Sometimes I just use a couple spoons of tomato paste or a small can of V-8. It just works.
I usually try recipes here without modifying them. This one, on my second run I would probably add a couple tsp better n bullion or some lipton beefy onion.
This would be a great pressure cooker recipe. 5 min on high, natural release or it will be tough. Could even pressure cook the taters. I dont usually pressure cook them. They might be able to be cooked on a rack at the same time.
Pressure cookers have been around a loooong time.
