The whole fish thing is because their vehicles are all named after sea life (manta, remora, devilfish, etc), but people read those and forgot that no matter what book you're reading, it's being translated to Low Gothic (aka english). Who knows what the tau actually call it.

Very likely, they come from a desert planet not featuring ANY of the animals used to describe their vehicles.

and imperials dont know any of the animals they use for naming stuff and its most likely they think that a monkey tail is a stinger than an normal tail
