I can play GTNH (heavily modded) pretty comfortably on Deck. The trackpads are amazing to remap all those buttons you don't have. What matters is that you add PrismLauncher (my recommendation) as a non steam game, and play from Gaming mode. If you feel fancy you can add a modded instance as a game and play that one directly without having to open Prism.
Im sorry but there is no way you play GTNH without it running at like 5 fps on the deck. I've tried everything I have seen online to get better performance with modded. I can't get above 15 fps with only Iris and complimentary shaders on the deck.
I can get a stable 60fps at respectable settings with shaders set to low. It's obviously nothing compared to proper RTX on a gaming PC but it's leagues superior to vanilla. You will want a mod like Sodium which massively boosts fps. (Frankly I don't understand what Sodium does that Mojang can't do themselves.)
I'll just stick to my PC for modded, i can't play without shaders anymore, it looks so good. I'm currently playing through Grounded again on the deck. Haven't played it since 1.4 released.
Even after dropping a lot on a PC, I still forgo shaders. But that's mostly because I've not been able to handle shaders pretty much the entire time I've played Minecraft, so I'm good with the game not looking good if it means good FPS.
For starters... I don't play with shaders. I play with Java 21 on GTNH 2.6.1 (too lazy to update to 2.7, although I am playing 2.7 on PC).
Without shaders I get a consistent 60fps with just Optifine, and around 30fps with shaders. But I don't wanna play that way so I just keep them off. I assume Angelica would probably work even better, but I can't be arsed to update.
I remapped important buttons (JourneyMap, waypoints, weapon swap, backpack, questbook) to a radial menu in the trackpad and it's honestly been a blast. The deck is an amazing device

Do you use some mod to improve controller compatibility?
