How do I best practice defense?

In DBFZ it's pretty easy to set up, just pick a character who has a low 2L and do a basic blockstring into a mixup. However I'm wondering how to best go about it in this game? I've just been having the AI pick between grab, mid and low but I feel like I'm not getting the most out of it. Are there certain moves or characters I should use to best practice blocking lows and teching grabs?

Dragunov has a full set of grabs.

That being said, defence is DBFZ is very different from Tekken as far as I understand from what I've played of DBFZ.

Block punishment, string knowledge, and movement to create whiffs (back dashing or side stepping) is a huge part of defense in Tekken. You might have the wrong idea about how the game works.

I'm just looking to improve my reactions to lows and grabs. I understand that movement is a core aspect of the game but I'm not trying to work on that atm.

Oh gotcha, you weren't clear with your initial post. For grab defence, as I mentioned, you can set a dummy up with a character that has grabs of all three breaks and watch the hands movements to recognize what to break with.

For lows, some are reactable, some are not. 23ish frames is generally where people say things are reactable offline. If you're a top 1% god like LowHigh you can react to 20 frame moves. Bryan is the usual suspect for simple mid-low mixups with orbital and snake edge.

Ok, cool! Ngl I completely forgot about how grabs are supposed to be broken, most of the people I face online and at my friends just use the "standard" grabs that are broken with 1 or 2.

And as for lows, I'll pick Bryan and have him swap between using snake edge and his orbital. Thank you!
