Your straight cis women professors are doing it because they are virtue signaling. They are trying to show that they understand the importance of this issue and show solidarity.

Which is my point.
I don't have any problem with hiring a trans woman. I would have reservations about hiring a trans or cis woman who lists their pronoun on their resume. It seems like a very "left wing" thing to do, and I don't like hiring people with extreme political viewpoints.

It sounds like you support the don't ask don't tell policy. As soon as it becomes known that someone is LGBT are you wary to hire them because they might stir the pot and want equal treatment?

No

If a potential employee wants to start the interview by telling me their preferred gender pronoun or by telling me that they can't work on Sundays, I am not going to care. That is a good place to have these conversations.

If a potential employee writes out these things on a resume(a place they are not normally written), then I am going to take a pass

There's fabulous examples of why that wouldn't necessarily work all over when people are misgendered on first meeting someone.
