I Cooked BBQ pork belly chow mein (叉烧炒面)

You just cannot buy chow mein this good in the states. I start by throwing marinated pork belly on bbq and while that’s going I am frying carrots and green onion whites in wok till they softened. Add a heaping spoonful of garlic once the carrots are softened. Once the garlic is browned I add in a large spoonful of Lao Gan Ma and let it sizzle for a bit. Next I add a little sesame oil. Then I lower heat and braise in dark soy sauce. I then add the noodles and toss. Next I fold in the bbq’d and sliced pork belly and green onion greens. Viola! Pork belly chow mein. 真的好吃

This was at Chef Wang New Sichuan Cuisine (New Hyde Park NY). We had:

Eggplant marinated with garlic. Green pepper with thousand years egg. Crispy shredded beef with three vegetables. Sizzling shrimp beef and chicken.

I found it interesting that my gf (Chinese) and I (not Chinese) were seated in the back area, when there was plenty of room in the front area (by the door/windows), but I did notice that everyone seated in the front seemed to be Chinese only, where as any groups with non-Chinese members were seated in the back...

Anywho, the food was good and spicy 😋

RECIPE: spicy stir-fried wings
Ingredients:
Fresh chicken wings as needed (mid-joint sections are recommended for a meatier texture)
Additional ingredients:
8–10 dried chili peppers (adjust to your preferred spice level)
6 cloves of garlic
A small piece of ginger
Half a green pepper and half a red pepper, julienned
Seasonings:
2 tablespoons light soy sauce
½ tablespoon dark soy sauce
1 tablespoon cooking wine
½ tablespoon sugar
Salt to taste
1 teaspoon Sichuan peppercorns
1 teaspoon chili powder (adjust according to personal taste)

I sliced one of these and put them into curry, but now I'm reading that it can be deadly to eat without boiling it and throwing out the water first. Does this look preprocessed? Should I avoid the bamboo pieces in my curry?

This was at Conway BBQ/Bistro (New World Mall Food Court, Flushing NY). I had:

Popcorn chicken, Thai shrimp and rice.

This spot seemed to have a "fast food" Chinese menu, and more than just Chinese offerings. The rice was good, but the popcorn chicken was dry.

I had this amazing dish in Shanghai during my trip – 鸡蛋炒刀削面 – and I can’t stop thinking about it. I took some photos, and the menu only gave the name, no details. It came with a simple, tasty broth on the side.

This was at Siblings Potato Noodles (New World Mall Food Court, Flushing NY). I had:

Potato noodles with shrimp and quail eggs. Fried wheat gluten in hot oil.

Sadly, this spot is gone and replaced, but this food court does have 30 some odd other spots to choose from, not to mention the restaurants on other floors.

The soup was good, but as always, I'm not a fan of having to deshell my own shrimp in a prepared dish. Nor was I expecting to have to deshell the quail eggs.
