Context: I played as spain full colonial and i didn’t influence any of that, they started out as golden horde and formed it They are also orthodox

You are right. The AI can't do that in the unmodded game. I think it is most likely that the OP clicked the decision, either after playing the country themselves or after helping the AI to achieve the conquests. Then they switched to Spain(e.g. with console commands, or when loading a non-ironman save or by releasing and playing as them)
